Purchased by Ren\u00e9 and Marie Archimbeau in 1961, this \u201ctasting room\u201d underwent major work in the following years for the development of the various rooms and kitchens, the construction of the hotel in 1971, then beautification work was carried out between 2016 and 2024 to make it the hotel-restaurant as it is today.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-659aff1 e-flex e-con-boxed e-con e-parent\" data-id=\"659aff1\" data-element_type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div class=\"elementor-element elementor-element-321e03a e-con-full e-flex e-con e-child\" data-id=\"321e03a\" data-element_type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-845c934 elementor-widget elementor-widget-heading\" data-id=\"845c934\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">More than 100 years of history<\/h3>\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a85d60a elementor-widget elementor-widget-text-editor\" data-id=\"a85d60a\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t<p><br \/>The history of the C\u00f4te Bleue is closely linked to the culture of oysters and mussels, in the very heart of the Thau Basin.<\/p><p>It all started with mussel farming trials in the canals of S\u00e8te in 1896 by Mr. Lafitte.<\/p><p>In 1904, Mr. Tudesq began oyster farming. Oysters were collected on openwork cement pyramids; they were mainly flat oysters, which were then dominant in the Thau Basin. Mr. Tudesq, a mason by trade, developed the method of gluing oysters with cement on mangrove or azob\u00e9 bars, and the development of the cupped oyster gradually took place.<\/p><p>The oyster spat comes from the Marennes-Ol\u00e9ron and Arcachon regions.<\/p><p>He built the C\u00f4te Bleue tasting in 1925, which is when the \u201ctasting\u201d began to expand.<br \/>At first, the oysters were sold by the kg, as they are today, because Mr. Tudesq registered the brand &quot;C\u00f4te Bleue&quot; which was continued by his successor Mr. Archimbeau Ren\u00e9, then by the Archimbeau family and children. This brand is renewed every 10 years.<\/p><p>The &quot;tasting&quot; was sold by Mrs. Tudesq (who had succeeded Mr. Tudesq, who died in 1948) to Mr. and Mrs. Archimbeau Ren\u00e9 in 1961.
